BEEF BULGOGI BOWL - RECIPE

Let’s be real… when the clock hits 5PM and everyone’s asking what’s for dinner, I need something quick that doesn’t taste like “quick.” This beef bulgogi bowl is one of our go-to meals. It’s packed with flavor, comes together in under 30 minutes, and my kids actually eat it (which says a lot). It’s sweet, savory, just the right amount of spicy—and so easy to make.

Whether it’s a chill dinner at home or you’re trying to switch up your weeknight rotation, this one never misses.

Ingredients

  • 1 lb ground beef (lean works best)

  • 3 tablespoons soy sauce

  • 2 tablespoons brown sugar

  • 1 tablespoon sesame oil

  • 2 cloves garlic, minced

  • 1-inch piece ginger, grated

  • 1 tablespoon gochujang (Korean chili paste)

  • 1 teaspoon black pepper

  • 2 green onions, chopped

  • 1 cup shredded carrots

  • 1 cup cooked white rice (or brown rice if you prefer)

  • 1 tablespoon sesame seeds (for garnish)

  • Optional: sautéed spinach or greens of your choice for serving

Instructions

  1. In a large skillet or wok, heat the sesame oil over medium-high heat.

  2. Add the minced garlic and grated ginger. Sauté for about 30 seconds, just until fragrant.

  3. Turn up the heat to high and add the ground beef. Cook, breaking it apart, until it’s browned and fully cooked—about 5 to 7 minutes.

  4. Stir in the soy sauce, brown sugar, gochujang, and black pepper. Let it cook for another 2 to 3 minutes so the flavors can really come together.

  5. Fold in the shredded carrots and half of the green onions. Cook for 1 to 2 more minutes—just enough to soften the carrots without losing that crunch.

  6. Serve the beef mixture over a bed of warm rice.

  7. Garnish with the rest of the green onions and a sprinkle of sesame seeds.

  8. Want to boost the veggies? Add some sautéed spinach or bok choy on the side—it’s so good with the bold flavors.

Quick Tips

  • This reheats beautifully, so feel free to double it for leftovers.

  • Want a little crunch? Add some sliced cucumbers or kimchi on the side.

  • We like serving it in bowls topped with a little extra sesame oil for shine and flavor.
